I've seen a lot about this on pinterest and the various cooking Facebook groups I'm on but I've always been a bit skeptical.
However, one mass sandstorm coupled with the worst night sleep we've had in a long long time that resulted in me in the toddlers bed (thankfully his new bed is a single!!) I didn't have the energy to face the shops to come up with a different baking task that would occupy him. And I decided that the sensory aspect would be enough of an incentive to at least try it. Plus my yogurt was going out of date!
Our original attempt was going to be peach scrolls with 2 Ingredient dough. What actually transpired was peach mess with the dough! Why peach? Well I had a tin of peaches in and I didn't have the natural yogurt that the recipe called for so I used the peach yogurt I had instead.
Ingredients
1 cup of self raising flour1 cup yogurt
Half tin peaches
How to do it
Preheat oven to 180 degrees
1. Combine the yogurt and flour in a bowl until it comes into a ball
2. Tip out onto floured surface and knead for 5 minutes **or let toddler loose on squashing and rolling and be prepared for the mess**
3. Roll out with your hands into a rough rectangle
4. Lay peach slices on top
5. Roll Swiss roll style as best you can
6. If yours works better than my mess you can then cut into pinwheels, as it was I just transferred the log to a greased baking tray
7. Cook for 15 minutes, until the top is golden brown
Verdict
The toddler thought it was cake so he was sold immediately!
I liked that it only has 2 ingredients and that it could be knocked up in 10 minutes. I am going to get some Greek yogurt to try a plain bread flavour for easy pizza dough lunch going forward as it really is that easy!
However - the worst bit? The mess. But that's more the toddler than anything else, the dough got EVERYWHERE. Though he declared it delicious while raw, I suppose that for once I wasn't attempting to stop him eating raw egg!!!
